Apple Slice Sandwiches

I’ve been using unripened tomatoes to make little sandwiches like this for years and it’s so messy.  Tomato juice drips down your arms and you have to fight the urge of trying to lick your elbows in public.  Apple slices are delicious, not messy, and so refreshing!

Ingredients

1 Green Apple

Filling:

1 can of tuna
2 tbsp lemon juice
2 tbsp olive oil mayonnaise
1 tsp pepper
1 celery stick, finely chopped
1/4 cup freshly chopped basil

Directions

Mix all ingredients in a bowl and refrigerate for an hour.  Slice the green apple horizontally, about 1/4″ slices.  Make little sandwiches and you’re ready to roll.
